To create this award-winning Mediterranean soft cheese, Brush Creek Creamery makes yogurt with pasteurized cows milk and drains it through cheesecloth until it is thick. It is then spiced with fresh garlic, parsley and salt. They shape it into balls and drop it in olive oil with peppercorns, fresh herbs and dried red pepper for garnish.
